Deda's

A sanctuary of stone and fire

The Concept

In the heart of Bilbao, between historic stone walls and a modern glass ceiling, we have built a home for an ancestral spirit — a dialogue between the solidity of Basque architecture and the warmth of the Georgian home. A place where time stops, and where “Deda,” the mother pillar, the origin, lives in every corner.

Our Story

Three women, one origin

Tamta brings every dish to life. Tamar drives Deda’s from its essence and made this project real. Maia arrives from Kakheti, bringing the varieties that now live in our cellar. Together, in Bilbao, they carry the ancient traditions of their land and reshape them in the local spirit.

Bread & Tradition

From the oldest traditions, a modern essence

Shoti bread has held a special place on Georgian tables for centuries. Today that same tradition inspires some of our most loved dishes — like the shotini. At Deda’s we believe tradition is not meant to stand still, but to keep evolving without losing its essence.
